    Prepare the Beef Tenderloin

    Preheat the oven to 400°F (200°C). Season the beef tenderloin with salt and pepper on all sides. Heat a large oven-safe skillet over medium-high heat and add 1 tablespoon of olive oil. Once hot, sear the beef for 3-4 minutes on each side until browned.

    Roast the Beef

    Transfer the skillet with the seared beef tenderloin to the preheated oven. Roast for about 20-25 minutes or until the internal temperature reaches 135°F (57°C) for medium-rare. Remove from the oven and let it rest for 10 minutes.

    Sauté the Maitake Mushrooms

    While the beef is resting, clean and slice the maitake mushrooms. In a separate skillet, heat the remaining tablespoon of olive oil over medium heat. Add the mushrooms and minced black garlic, sautéing for about 5-7 minutes until the mushrooms are tender and golden.

    Blanch the Broccolini

    In a pot of boiling salted water, blanch the broccolini for 2-3 minutes until bright green and tender-crisp. Drain and immediately transfer to a bowl of ice water to halt the cooking process. Once cooled, drain again and set aside.

    Plate and Serve

    Slice the rested beef tenderloin into thick medallions. On each plate, arrange the sliced beef, sautéed maitake mushrooms, and blanched broccolini. Drizzle with Bordelaise sauce if desired, and serve immediately.
