Prepare Duck Breasts
Score the skin of the duck breasts in a crosshatch pattern without cutting into the meat. Season both sides with salt and black pepper. Let them rest at room temperature for 30 minutes.

Prepare Parsnip Purée
Peel and chop the parsnips into small pieces. Boil them in salted water until tender, about 15-20 minutes. Drain and blend with half of the butter until smooth. Season with salt and pepper to taste.

Make Madeira Jus
In the same pan used for the duck, add Madeira wine and chicken stock. Reduce until thickened, about 5-10 minutes. Strain if desired.

Plate the Dish
On each plate, spread a layer of parsnip purée, arrange the duck breast slices on top, add a serving of brown butter farro and glazed beetroot on the side. Drizzle with Madeira jus before serving.
