Soak the pork sausage casings in water for about an hour, then rinse thoroughly inside and out.

In a large mixing bowl, combine ground pork, diced jalapeño peppers, minced garlic, smoked paprika, cumin, black pepper, salt, cayenne pepper, and chopped parsley. Mix thoroughly until well combined.

Stuff the Sausages

Using a sausage stuffer, carefully stuff the sausage mixture into the prepared casings, being careful not to overstuff. Tie off the ends of the sausages with kitchen twine.
