Preparation Steps

1

Prepare the Ingredients

Begin by finely dicing the jalapenos and setting them aside. If using hog casings, soak them in warm water for at least 30 minutes.

2

Mix the Sausage

In a large mixing bowl, combine the ground pork, diced jalapenos, garlic powder, onion powder, paprika, black pepper, salt, cayenne pepper, and chopped parsley. Mix thoroughly until all ingredients are well incorporated.

3

Stuff the Sausage (Optional)

If using hog casings, rinse them under cold water. Using a sausage stuffer, carefully fill the casings with the sausage mixture, being careful not to overstuff. Tie off the ends securely.

4

Cook the Sausage

Preheat a skillet over medium heat. If not using casings, form the mixture into patties and cook for about 5-7 minutes on each side until fully cooked. If using casings, cook the sausages until browned and cooked through, about 8-10 minutes.

5

Serve

Remove from heat, allow to cool slightly, and serve hot. Enjoy your homemade Jalapeno Sausage!
