Preparing the Chicken Wings

Season the Wings
In a large bowl, mix the chicken wings with salt and black pepper. Ensure they are well coated.

Coat with Cornstarch
Sprinkle cornstarch over the seasoned wings and toss until they are evenly coated.

Marinate
Cover the bowl with plastic wrap and let the wings marinate in the refrigerator for at least 1 hour or overnight for better flavor.
Making the Szechuan Marinade

Prepare the Marinade
In a small bowl, combine Szechuan peppercorns, soy sauce, rice vinegar, minced garlic, grated ginger, chili paste, honey, and sesame oil. Whisk until thoroughly mixed.

Combine with Wings
After marinating, remove the wings from the refrigerator and toss them in the Szechuan marinade until well coated.
Cooking the Wings

Heat the Oil
In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

Fry the Wings
Carefully add the marinated wings into the hot oil, working in batches if necessary. Fry for about 10-12 minutes or until golden brown and crispy.

Remove the wings from the oil and place them on a paper towel-lined plate to drain excess oil.
Making Blue Cheese Dressing

In a medium bowl, combine crumbled blue cheese, mayonnaise, sour cream, garlic powder, buttermilk, salt, and black pepper.

Use a fork to mix until well blended but still chunky. Serve as a dip with the hot Szechuan chicken wings.
