Prepare the Steak
Take the ribeye steaks out of the refrigerator and let them sit at room temperature for about 30 minutes before cooking. This ensures even cooking.

Rest the Steak
Once cooked, remove the steaks from the grill and let them rest for 5-10 minutes. This helps the juices redistribute within the meat.

Prepare the Potatoes
Peel the russet potatoes and cut them into thin strips (about 1/4 inch thick) to create fries. Rinse in cold water to remove excess starch.

Soak the Potatoes
Soak the cut fries in cold water for at least 30 minutes. This step helps to make them crispy.

Heat the Oil
In a large pot, heat the vegetable oil to 350°F (175°C). Use a thermometer to check the temperature.

Fry the Potatoes
Remove the fries from the water and dry them thoroughly with a kitchen towel. Carefully add them to the hot oil in batches, frying for about 5-7 minutes until golden brown. Remove with a slotted spoon and drain on paper towels.
