Prepare the Broth

    Make the Broth

    In a large pot, add pork bones and water. Bring to a boil, then reduce heat and simmer for 4 hours.

    Add Flavorings

    After 4 hours, add soy sauce, mirin, ginger, garlic, and green onions to the pot. Continue to simmer for an additional 1 hour.

    Strain the Broth

    Remove the pork bones and strain the broth through a fine mesh sieve to remove solids. Keep the broth warm.

Cook the Noodles and Prepare Toppings

    Cook the Ramen Noodles

    In a separate pot, bring water to a boil. Add ramen noodles and cook according to package instructions (usually about 3-4 minutes). Drain and set aside.

    Prepare the Bok Choy

    In the same pot, blanch the baby bok choy in boiling water for 1-2 minutes until tender. Drain and set aside.

    Soft-Boil the Eggs

    In a small pot, bring water to a gentle boil. Carefully add the eggs and boil for 6-7 minutes. Remove and place in an ice bath to cool. Peel and set aside.

Assemble the Ramen Bowl

    Assemble the Bowl

    In a large bowl, place a serving of ramen noodles at the bottom. Ladle the warm broth over the noodles.

    Add Toppings

    Top the ramen with sliced pork belly, baby bok choy, soft-boiled eggs (halved), and nori sheets. Sprinkle sesame seeds on top.

    Finish with Chili Oil

    Drizzle chili oil over the top to taste. Serve immediately.
