    Preheat Oven

    Preheat your oven to 400°F (200°C).

    Prepare Potatoes

    Scrub the russet potatoes under cold water to remove dirt. Pat them dry with a paper towel.

    Bake Potatoes

    Prick each potato several times with a fork, then place them directly on the oven rack. Bake for 45-60 minutes until tender.

    Cook Bacon

    While the potatoes are baking, cook the bacon in a skillet over medium heat until crispy. Drain on paper towels and crumble when cool.

Assemble Potato Skins

    Cut Potatoes

    Once the potatoes are cooked, remove them from the oven and let them cool slightly. Cut each potato in half lengthwise.

    Scoop Out Flesh

    Scoop out most of the flesh from the potato halves, leaving about 1/4 inch of potato on the skin.

    Season and Oil

    Brush the insides of the potato skins with olive oil, and sprinkle with salt and black pepper.

    Bake Again

    Place the potato skins on a baking sheet and return them to the oven. Bake for an additional 10-15 minutes until crispy.

    Add Toppings

    Remove the potato skins from the oven and sprinkle each with cheddar cheese and crumbled bacon. Return to the oven for another 5 minutes until the cheese is melted.

Serve

    Garnish

    Remove the potato skins from the oven and let them cool slightly. Top with sliced green onions and serve with a side of sour cream.
