    Hard boil the eggs

    Place the eggs in a single layer in a saucepan and cover them with cold water. Bring to a boil over medium-high heat. Once boiling, cover the pot and remove it from heat. Let the eggs sit for 12-14 minutes.

    Cool the eggs

    After the eggs have finished cooking, transfer them to a bowl of ice water for 5-10 minutes to cool completely. This will make peeling easier.

    Peel the eggs

    Once cooled, gently tap the eggs on a hard surface and peel under running water if needed to remove the shell easily.

Filling Preparation

    Prepare the filling

    Cut each egg in half lengthwise and remove the yolks. Place the yolks in a mixing bowl and mash them with a fork.

    Mix ingredients

    Add the mayonnaise, Dijon mustard, hot sauce, salt, black pepper, and paprika to the mashed yolks. Mix until smooth and creamy.

    Add chives

    Fold in the chopped chives or green onions for added flavor and texture.

Assembly

    Fill the egg whites

    Using a spoon or piping bag, carefully fill each egg white half with the yolk mixture.

    Garnish

    Sprinkle additional paprika on top and garnish with a small amount of chopped chives or green onions.
