Prepare the Dough
In a medium saucepan, combine water, granulated sugar, butter, and salt. Bring the mixture to a boil over medium heat.

Add Flour
Once boiling, remove the saucepan from heat and immediately stir in the all-purpose flour until fully incorporated. The dough will be thick and form a ball.

Incorporate Eggs
Let the dough cool slightly. Add the eggs one at a time, mixing well after each addition until the dough is smooth and glossy.

Heat Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Pipe the Churros
Transfer the dough to a piping bag fitted with a star tip. Pipe about 4-6 inch long strips of dough into the hot oil, being careful not to overcrowd the pan.

Fry Until Golden
Fry the churros for 2-3 minutes on each side until they are golden brown. Use a slotted spoon to remove them and drain on paper towels.

Coat with Sugar and Cinnamon
In a shallow dish, mix the granulated sugar and cinnamon. Roll the fried churros in the mixture until fully coated.

Heat the Cream
In a small saucepan, heat the heavy cream over medium heat until it begins to simmer, but do not let it boil.

Add Chocolate
Remove from heat and add the semi-sweet chocolate chips, stirring until melted and smooth.

Finish the Sauce
Stir in the vanilla extract for added flavor. Allow the sauce to cool slightly before serving.
