Calamari Preparation

Prepare the Calamari
Rinse the calamari under cold water and pat dry with paper towels. Cut the calamari into rings if not pre-cut.

Mix the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. In a separate bowl, whisk the egg and cold water together. Gradually add the egg mixture to the flour mixture, stirring until a smooth batter forms.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Fry the Calamari
Dip the calamari rings into the batter, allowing excess to drip off. Carefully place them into the hot oil in batches. Fry for about 2-3 minutes or until golden brown. Remove with a slotted spoon and drain on paper towels.

Add Tomatoes and Seasoning
Add the canned crushed tomatoes, dried oregano, salt, and black pepper to the pan. Stir well to combine.

Simmer the Sauce
Bring the mixture to a simmer and reduce heat to low. Let it cook for about 15 minutes, stirring occasionally.

Finish with Basil
Stir in the chopped fresh basil just before serving.
