Prepare the Calamari
If the calamari is whole, clean and cut it into rings, then pat dry with paper towels.

Mix Dry Ingredients
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder.

Coat the Calamari
Dip each calamari ring first into the egg wash and then into the flour mixture, ensuring it is well coated.

Heat Oil
In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

Fry the Calamari
Fry the calamari rings in batches for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Add Tomatoes and Seasonings
Stir in the crushed tomatoes, dried oregano, salt, black pepper, and red pepper flakes. Bring to a simmer.

Simmer Sauce
Let the sauce simmer for about 15-20 minutes, stirring occasionally.

Finish with Parsley
Stir in the fresh parsley before serving.
