Prepare the Protein

    Cook the Protein

    In a skillet over medium heat, add the olive oil. Once hot, add the ground beef or shredded chicken and cook until browned or heated through. Drain excess fat if necessary.

    Season the Protein

    Add the taco seasoning and water to the skillet. Stir to combine and let simmer for about 5 minutes, until the sauce thickens slightly.

Prepare the Vegetables

    Sauté the Vegetables

    In a separate pan, add a bit of olive oil and sauté the diced bell peppers and onions until they are soft, about 5 minutes. Add the corn and black beans, cooking for an additional 2-3 minutes until heated through.

Assemble the Burritos

    Prepare the Tortilla

    Warm the large flour tortillas in a dry skillet or microwave for a few seconds until pliable.

    Fill the Tortilla

    On each tortilla, add a portion of the cooked protein, sautéed vegetables, shredded cheese, sour cream, salsa, and shredded lettuce.

    Roll the Burrito

    Fold in the sides of the tortilla and roll it tightly from the bottom up. Ensure all fillings are secured inside.

    Grill the Burrito

    In the same skillet used for the protein, add a little olive oil and place the rolled burrito seam-side down. Grill for 2-3 minutes on each side until golden brown and crispy.
