Roasted Portobello Mushrooms

Roasting Portobello Mushrooms

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Prepare the Mushrooms

    Clean the portobello mushrooms with a damp cloth and remove the stems.

    Season the Mushrooms

    In a bowl, mix olive oil, garlic powder, salt, black pepper, and balsamic vinegar. Brush this mixture onto both sides of the mushrooms.

    Roast the Mushrooms

    Place the mushrooms on a baking sheet, gill side up, and roast in the oven for 20-25 minutes until tender.

Preparing Burrito Filling

    Combine Ingredients

    In a mixing bowl, combine cooked brown rice, black beans, corn, diced red bell pepper, diced red onion, chopped cilantro, and lime juice. Mix well.

Assembling the Burritos

    Warm the Tortillas

    If desired, warm the tortillas in a skillet for a few seconds on each side until pliable.

    Fill the Tortillas

    Place a roasted portobello mushroom in the center of each tortilla. Top with the burrito filling, a dollop of sour cream, and sprinkle shredded cheese.

    Wrap the Burritos

    Fold the sides of the tortilla over the filling, then roll from the bottom up to enclose the filling completely.

    Cut in half and serve with hot sauce on the side, if desired.
