Preparation of Ingredients
Prepare the Chorizo
In a skillet over medium heat, cook the chorizo until fully browned, about 5-7 minutes. Use a spatula to break it into small pieces while cooking.
Mince the Garlic
While the chorizo is cooking, mince the garlic cloves and set aside.
Dice the Jalapeño
If using, dice the jalapeño and set aside.
Grate the Cheese
Grate the Chihuahua and Monterey Jack cheese and set aside in a bowl.
Cooking the Queso Fundido
Add Cheese
Gradually add the grated Chihuahua cheese, Monterey Jack cheese, and cream cheese to the skillet. Stir continuously until the cheese is melted and the mixture is creamy and well combined.
Serve
Transfer the melted cheese mixture to a serving dish, garnish with chopped cilantro, and serve immediately with warm corn tortillas.
