Method

Prepare the Protein Filling

    Cook Ground Beef

    In a large skillet over medium heat, add the olive oil. Once hot, add the ground beef, breaking it up with a spoon. Cook until browned, about 5-7 minutes.

    Season the Beef

    Add taco seasoning to the browned beef and stir to combine. Cook for another 2-3 minutes until the beef is well coated with seasoning.

Prepare the Vegetable Filling

    Sauté Vegetables

    In a separate pan, add a little olive oil over medium heat. Add diced onion and minced garlic, and sauté for 2-3 minutes until translucent.

    Add Beans and Corn

    Add the black beans (drained and rinsed) and corn to the onion and garlic mixture. Stir and cook for another 5 minutes. Dice the bell pepper and add to the mixture, cooking for an additional 2 minutes until heated through.

Assemble the Burrito

    Layer Fillings

    On each flour tortilla, layer a portion of the cooked ground beef, vegetable mixture, and shredded cheese.

    Add Toppings

    Top each burrito with sour cream, salsa, and sliced avocado.

    Roll Up Burrito

    Fold the sides of the tortilla over the filling, then roll from the bottom up to enclose the ingredients tightly.

Cook the Burrito

    Grill the Burrito

    In the same skillet used for the beef, place the rolled burritos seam-side down. Cook on medium heat for 2-3 minutes on each side until golden brown.
