Dough Preparation

Mix Dry Ingredients
In a large bowl, combine yellow cornmeal, tapioca flour, and salt. Mix well.

Add Wet Ingredients
Add olive oil and warm water to the dry mixture. Stir until a dough forms.

Knead Dough
Knead the dough on a lightly floured surface (using tapioca flour) until it is smooth and elastic.

Rest Dough
Cover the dough with a damp cloth and let it rest for 30 minutes.
Chicken Filling Preparation

Add Chicken and Season
Add the cooked chicken breast, cumin, salt, and pepper. Stir to combine and cook for another 5 minutes.

Cool Filling
Remove from heat and let the filling cool.
Beef Filling Preparation

Add Ground Beef and Season
Add the ground beef, chili powder, salt, and pepper. Cook until the beef is browned and fully cooked.

Spinach Filling Preparation

Add Spinach and Feta
Add chopped spinach and cook until wilted. Stir in feta cheese, salt, and pepper.

Remove from heat and let the filling cool.
Assembling and Cooking Empanadas

Preheat Oven
Preheat your oven to 375°F (190°C).

Roll Out Dough
Divide the rested dough into small balls. Roll each ball into a circle about 5 inches in diameter.

Add Fillings
Place a spoonful of each filling (chicken, beef, and spinach) on one half of the dough circle.

Seal Empanadas
Fold the dough over to cover the filling and press the edges together to seal. Use a fork to crimp the edges.

Bake Empanadas
Place the empanadas on a baking sheet lined with parchment paper. Bake for 25-30 minutes or until golden brown.
