    Prepare the Plantains

    Peel the green plantains by cutting off the ends and making a shallow slit along the skin. Remove the skin completely and cut the plantains into 1-inch thick slices.

    Heat the Oil

    In a deep frying pan, pour in the vegetable oil and heat it over medium-high heat until it reaches 350°F (175°C).

    Fry the Plantains

    Carefully add the plantain slices to the hot oil in batches, frying them for about 3-4 minutes on each side until they are lightly golden.

    Flatten the Plantains

    Remove the fried plantains from the oil and place them on a paper towel-lined plate to drain. Using the bottom of a glass or a tostonera, flatten each slice to about 1/2 inch thick.

    Second Fry

    Return the flattened plantains to the hot oil and fry again for an additional 2-3 minutes until they are crispy and golden brown. Drain on paper towels and sprinkle with salt.

Green Chimichurri

    Prepare the Ingredients

    In a food processor, combine the fresh parsley, fresh cilantro, garlic cloves, red pepper flakes, red wine vinegar, olive oil, salt, and black pepper.

    Blend the Chimichurri

    Pulse the food processor until the mixture is well blended but still slightly chunky, scraping down the sides as necessary.

    Taste and Adjust

    Taste the chimichurri and adjust seasoning if necessary by adding more salt, pepper, or vinegar to suit your taste.
