Preparing the Tinga

    Cook the Chicken

    In a large pot, add the chicken breasts and cover them with water. Bring to a boil and simmer for about 15-20 minutes or until the chicken is fully cooked. Remove the chicken, let it cool slightly, and shred it using two forks.

    Sauté the Vegetables

    In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened and translucent, about 5 minutes.

    Prepare the Sauce

    Stir in the tomato sauce, chipotle peppers, cumin, salt, and pepper to the skillet. Let it simmer for about 5 minutes.

    Combine Chicken with Sauce

    Add the shredded chicken to the skillet, stirring to combine thoroughly. Cook for an additional 5 minutes to let the flavors meld. Remove from heat.

Assembling the Quesadilla

    Fill the Tortilla

    Heat a separate skillet over medium heat. Place one tortilla in the skillet and sprinkle a layer of cheese on half of the tortilla. Spoon some of the tinga mixture over the cheese and top with more cheese. Fold the tortilla in half.

    Cook the Quesadilla

    Cook the quesadilla for about 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Remove from skillet and repeat with the remaining tortillas and filling.

    Serve

    Cut the quesadillas into wedges and serve with fresh cilantro, sour cream, and avocado slices on the side.
