Method

Cooking the Chicken

    Prepare the Chicken

    In a pot, add the chicken breasts and cover with water. Bring to a boil, then reduce the heat and simmer for 20-25 minutes or until fully cooked. Remove the chicken, let it cool slightly, and shred it using two forks.

Making the Sauce

    Sauté Vegetables

    In a skillet, heat a tablespoon of oil over medium heat. Add the sliced onion and cook until translucent, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes.

    Combine Ingredients

    Add the chopped chipotle peppers, diced tomatoes, chicken broth, cumin, oregano, salt, and pepper to the skillet. Stir well to combine.

    Simmer the Mixture

    Bring the mixture to a simmer and let it cook for about 10 minutes to allow the flavors to meld. Finally, stir in the shredded chicken and cook for another 5 minutes.

Assembling the Burritos

    Prepare Tortillas

    Warm the flour tortillas in a dry skillet over low heat for about 30 seconds on each side, or until pliable.

    Fill the Burritos

    Place a portion of the chicken tinga mixture in the center of each tortilla. Top with shredded cheese, a dollop of sour cream, and a sprinkle of fresh cilantro.

    Fold in the sides of the tortilla and then roll it up tightly from the bottom to the top. Ensure the filling is enclosed.
