Chicken Filling

    Prepare Chicken

    In a pot, place the chicken breasts and cover with water. Bring to a boil and cook for 15-20 minutes until fully cooked. Remove the chicken, shred it using two forks, and set aside.

    Caramelize Onions

    In the same pot, heat the olive oil over medium heat. Add the sliced onion and cook until caramelized, about 10 minutes.

    Add Spices and Sauce

    Add minced garlic, cumin, paprika, salt, and black pepper to the onions. Cook for an additional minute. Then, add the shredded chicken and tomato sauce, stirring well to combine. Let it simmer for 5 minutes.

    Prepare Dough

    In a large bowl, mix the pre-cooked cornmeal and salt. Gradually add water, mixing with your hands until a dough forms. Let it rest for 5 minutes.

    Shape Arepas

    Divide the dough into 6 equal portions and shape each portion into a disc about 1/2 inch thick.

    Cook Arepas

    Heat a non-stick skillet over medium heat. Cook the arepas for about 5-7 minutes on each side until they are golden brown and slightly crispy.

    Prepare Toppings

    Slice the avocado and chop the fresh cilantro.

Assembly

    Assemble Arepas

    Slice each arepa in half and fill with the chicken tinga mixture. Top with avocado slices and cilantro. Serve warm.
