Preparing the Fish

Seasoning the Tilapia
In a small bowl, mix together the chile ancho powder, salt, and black pepper. Rub this mixture evenly over both sides of the tilapia fillets.

Pan-Searing the Tilapia
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned tilapia fillets. Cook for about 3-4 minutes on each side, or until the fish is golden brown and cooked through. Remove from heat and set aside.

Mixing the Dough
In a large mixing bowl, combine the pre-cooked cornmeal and salt. Gradually add the water, mixing with your hands until a soft, pliable dough forms. Allow the dough to rest for about 5 minutes.

Forming and Cooking the Arepas
Divide the dough into 4 equal portions and shape each into a patty about 1/2 inch thick. In a non-stick skillet over medium heat, cook the arepas for about 5-7 minutes on each side, or until they are golden and crispy.
