Prepare the Taco Filling

Cook the Ground Beef
In a large skillet over medium heat, add the ground beef and cook until browned, breaking it apart with a spatula. This should take about 5-7 minutes.

Add Seasoning
Once the beef is browned, drain any excess fat. Stir in the taco seasoning and water. Reduce heat to low and let simmer for about 10 minutes, stirring occasionally until the mixture thickens.

Heat the Oil
In a separate skillet, heat the vegetable oil over medium-high heat.

Fry the Corn Tortillas
Once the oil is hot, carefully add one corn tortilla at a time, frying each side for about 30 seconds or until crispy. Use tongs to flip. Place the fried tortillas on paper towels to drain excess oil.
Assemble the Tacos

Add Filling and Toppings
Take each crispy taco shell and fill it with the seasoned ground beef mixture. Top with shredded lettuce, shredded Monterey cheese, and pico de gallo.

Serve
Serve the tacos immediately while they are crispy, garnished with additional pico de gallo if desired.
