Preparing the Birria

    Cook the Brisket

    In a large pot, combine the beef brisket, dried guajillo peppers, dried pasilla peppers, chopped onion, minced garlic, cumin, oregano, salt, black pepper, bay leaves, and beef broth. Bring to a boil, then reduce to a simmer and cover. Cook for 3-4 hours or until the brisket is tender and easily shredded.

    Prepare the Consommé

    Once the brisket is cooked, remove it from the pot and let it cool slightly. Strain the cooking liquid to separate the solid ingredients. This strained liquid is your consommé, which will be served on the side.

    Shred the Brisket

    Using two forks, shred the brisket into bite-sized pieces and set aside.

Assembling the Tacos

    Warm the Tortillas

    In a skillet over medium heat, warm the corn tortillas until they are pliable, about 30 seconds on each side.

    Fill the Tacos

    On each warm tortilla, place a generous portion of shredded brisket and sprinkle shredded cheese on top. Fold the tortilla in half.

    Garnish and Serve

    Garnish with fresh cilantro and serve with lime wedges and a side of consommé for dipping.
