Trim any excess fat from the pork shoulder and cut it into large chunks for easier cooking.

In a bowl, mix together the smoked paprika, brown sugar, salt, black pepper, and cayenne pepper. Rub this mixture all over the pork pieces.

Sauté the Aromatics
In a large skillet, heat a little oil over medium heat. Add the chopped onion and minced garlic, cooking until the onion is translucent, about 5 minutes.

Combine Ingredients in Slow Cooker
Place the pork chunks into the slow cooker. Pour the sautéed onion and garlic mixture over the pork. Add the BBQ sauce, apple cider vinegar, and water. Toss to combine.
