    Prepare the Portobello Mushrooms

    Clean the Portobello mushrooms by wiping them with a damp cloth. Remove the stems and gills using a spoon.

    Marinate the Mushrooms

    In a bowl, combine the olive oil, minced garlic, salt, and black pepper. Add the cleaned mushrooms and coat them evenly with the marinade. Let them sit for about 15 minutes.

    Roast the Mushrooms

    Preheat the oven to 400°F (200°C). Place the marinated mushrooms on a baking sheet, gill side up. Roast in the oven for 20-25 minutes or until tender. Remove from the oven and chop into small pieces. Stir in chopped fresh parsley.

Quesadilla Assembly and Cooking

    Assemble the Quesadilla

    On one half of each tortilla, layer with shredded cheese, followed by the roasted mushroom filling, and top with more cheese. Fold the other half of the tortilla over to create a half-moon shape.

    Heat a non-stick skillet over medium heat. Place the folded quesadilla in the skillet and cook for 3-4 minutes on each side, or until the tortillas are golden brown and the cheese is melted.
