Soup Preparation

    Cook the Chicken

    In a large pot, add 4 cups of chicken broth and bring it to a boil. Add the chicken breast and simmer for about 20-25 minutes, or until cooked through. Remove the chicken, shred it with two forks, and set aside.

    Sauté the Vegetables

    In the same pot, add a little oil and sauté the chopped onion and minced garlic over medium heat until the onion is translucent, about 5 minutes.

    Combine Ingredients

    Add the hominy corn (drained and rinsed), shredded chicken, dried oregano, chili powder, and cumin to the pot. Stir to combine and cook for another 5-10 minutes, allowing the flavors to meld.

    Adjust Seasoning

    Taste the soup and adjust the seasoning as needed with salt and pepper.

Serving

    Garnish the Soup

    Ladle the pozole soup into bowls and garnish with fresh cilantro, lime juice (squeezed from the lime), and sliced radishes.

    Serve with Chips

    Serve the pozole with tortilla chips on the side for added crunch.
