Method

Prepare the Arepa Dough

    Mix the Dough

    In a large bowl, combine the masarepa, warm water, and salt. Mix well until a dough forms. Let it sit for about 5 minutes to hydrate.

    Shape the Arepas

    Once the dough has rested, divide it into 8 equal portions. Shape each portion into a ball, then flatten it to form a disc about 1/2 inch thick.

Roast the Portobello Mushrooms

    Prepare the Mushrooms

    Preheat the oven to 400°F (200°C). Clean the portobello mushrooms with a damp cloth and remove the stems.

    Marinate the Mushrooms

    In a bowl, mix olive oil, balsamic vinegar, garlic powder, black pepper, and salt. Brush this mixture onto the mushrooms, ensuring they are well coated.

    Roast the Mushrooms

    Place the mushrooms on a baking sheet and roast in the preheated oven for 20-25 minutes, flipping once halfway through, until tender and slightly caramelized.

Make Crushed Peppers

    Prepare the Peppers

    While the mushrooms are roasting, dice the red and yellow bell peppers into small pieces.

    Sauté the Peppers

    In a skillet, heat olive oil over medium heat. Add the diced bell peppers, seasoning with salt and black pepper. Cook for about 5-7 minutes, stirring occasionally, until the peppers are soft.

Cook the Arepas

    Cook the Arepas

    In a skillet or griddle over medium heat, cook each arepa for about 5-7 minutes on each side, or until golden brown and slightly crispy.

Assemble the Dish

    Fill the Arepas

    Slice each cooked arepa in half, creating a pocket. Fill each pocket with roasted portobello mushrooms and sautéed crushed peppers.

    Serve warm, optionally drizzling with additional balsamic vinegar or olive oil if desired.
