Marinade Preparation

    Prepare the Marinade

    In a bowl, mix together the adobo seasoning, olive oil, lime juice, minced garlic, salt, and black pepper to create the marinade.

    Marinate the Chicken

    Place the chicken breasts in a zip-lock bag or a shallow dish. Pour the marinade over the chicken and ensure it's well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.

Cooking the Chicken

    Grill the Chicken

    Preheat your grill to medium-high heat. Remove the marinated chicken from the refrigerator. Grill the chicken breasts for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from the grill and let rest for 5 minutes before slicing.

Arepa Preparation

    Mix the Arepa Dough

    In a large bowl, combine the arepa flour and salt. Gradually add the warm water while mixing with your hands until a soft, pliable dough forms. Let the dough rest for about 5 minutes.

    Shape the Arepas

    Divide the dough into 4 equal portions and shape each into a ball. Flatten each ball into a disc about 1/2 inch thick.

    Cook the Arepas

    Preheat a skillet or griddle over medium heat. Cook the arepas for about 5 minutes on each side, or until golden brown and slightly crispy on the outside. You can also bake them in a preheated oven at 375°F (190°C) for 10-15 minutes after pan-frying for extra fluffiness.

Assembly

    Assemble the Pollo Arepa

    Slice the grilled chicken into strips. Cut the cooked arepas in half and fill each half with sliced chicken. Top with avocado slices, chopped cilantro, a dollop of sour cream, and crumbled feta cheese.
