Sweet Plantains

    Prepare the Plantains

    Peel the ripe plantains and cut them into diagonal slices about 1 inch thick.

    Fry the Plantains

    Heat the vegetable oil in a large skillet over medium heat. Once hot, add the sliced plantains in a single layer and fry for about 2-3 minutes on each side, or until they are golden brown and caramelized. Remove from the skillet and drain on paper towels.

    Sauté the Aromatics

    In the same skillet, add a small amount of oil if necessary and sauté the chopped onion and minced garlic over medium heat until softened, about 3-4 minutes.

    Cook the Beans

    Add the canned black beans (drained and rinsed) to the skillet along with cumin, salt, and pepper. Stir well and cook for an additional 5-7 minutes until heated through.

Avocado and Tomato

    Prepare the Avocado and Tomato

    Dice the ripe avocado and the tomato. In a small bowl, combine the diced avocado and tomato, then drizzle with lime juice and mix gently to combine.

Assembling the Dish

    Layer the Ingredients

    On a serving plate, start by layering the black beans, followed by the fried plantains, avocado-tomato mixture, and finally, sprinkle the crumbled feta cheese on top.
