Prepare the Ingredients
Gather all ingredients and have them ready on a clean countertop. This includes the tortillas, mozzarella cheese, cooked rice, and sour cream.

Mix the Filling
In a mixing bowl, combine the cooked rice and mozzarella cheese. Add salt and black pepper to taste. If using, stir in chopped cilantro for added flavor.

Heat the Pan
Place a non-stick skillet over medium heat and add olive oil if using. Allow the pan to heat up for about 1-2 minutes.

Assemble the Quesadilla
Place one tortilla in the heated skillet. Spread half of the rice and cheese mixture evenly over the tortilla. Then, place the second tortilla on top.

Cook the Quesadilla
Cook for about 3-4 minutes on one side until the bottom tortilla is golden brown and the cheese begins to melt. Carefully flip the quesadilla using a spatula.

Finish Cooking
Cook for another 2-3 minutes on the other side until it is golden brown and the cheese is fully melted.

Remove the quesadilla from the skillet and let it cool for a minute. Cut into wedges and serve with sour cream on the side for dipping.
