Preparing Scrambled Eggs

Add Tomatoes and Eggs
Add the diced tomatoes to the skillet and cook for another 2 minutes. Pour the beaten eggs into the skillet and gently stir to scramble until cooked through, about 3-4 minutes. Stir in the chopped cilantro just before serving.

Prepare the Avocado
Slice the avocado in half, remove the pit, and scoop out the flesh. Cut into slices or cubes for serving.

Heat the Rice
If using leftover rice, heat it in a saucepan or microwave until warmed through.

Prepare Black Beans
If using canned black beans, drain and rinse them. Heat in a small saucepan over medium heat until warmed through.

Cook the Plantains
Peel the plantains and slice them diagonally into about 1-inch thick pieces. Heat oil in a skillet over medium heat, and fry the plantain slices until golden brown on both sides, about 2-3 minutes per side. Remove and drain on paper towels.
