Caramel Preparation

    Make the Caramel

    In a medium saucepan over medium heat, combine the granulated sugar and water. Stir gently until the sugar dissolves. Stop stirring and allow it to boil until it turns a deep amber color, about 8-10 minutes.

    Pour the Caramel

    Quickly pour the caramel into a round cake pan, tilting the pan to coat the bottom evenly. Set aside to cool and harden.

Flan Mixture Preparation

    Blend the Flan Ingredients

    In a blender, combine the cream cheese, sweetened condensed milk, evaporated milk, eggs, and vanilla extract. Blend until smooth and well combined.

    Pour the Mixture

    Pour the flan mixture over the cooled caramel in the cake pan.

Baking

    Prepare for Baking

    Preheat your oven to 350°F (175°C). Place the cake pan in a larger baking dish and fill the larger dish with hot water halfway up the sides of the cake pan.

    Bake the Flan

    Bake for 50-60 minutes, or until the flan is set and a knife inserted comes out clean. Remove from the oven and let it cool in the water bath.

    Chill the Flan

    Once cooled, refrigerate the flan for at least 4 hours or overnight to set completely.

Serving

    Serve the Flan

    To serve, run a knife around the edges of the flan to loosen it. Invert onto a serving plate so the caramel side is on top. Slice and enjoy!
