Fish Preparation

    Season the Fish

    In a bowl, combine olive oil, lime juice, garlic powder, cumin, paprika, salt, and black pepper. Mix well.

    Marinate the Fish

    Place the tilapia fillets in the bowl with the marinade and ensure they are fully coated. Let marinate for at least 15 minutes.

    Cook the Fish

    Heat a skillet over medium-high heat. Once hot, add the marinated tilapia fillets. Cook for 3-4 minutes on each side or until the fish is cooked through and flakes easily with a fork.

Quesadilla Assembly

    Prepare Tortillas

    Lay out two flour tortillas on a flat surface.

    Add Cheese

    Sprinkle half of the shredded cheese evenly over each tortilla.

    Add Cooked Fish

    Once the fish is cooked, flake it into bite-sized pieces and distribute it evenly over the cheese on both tortillas.

    Finish with Cheese

    Top the fish with the remaining shredded cheese before placing the second tortilla on top of each.

    Cook the Quesadilla

    Heat the same skillet over medium heat. Carefully transfer each quesadilla to the skillet and cook for 2-3 minutes on each side, or until the tortillas are golden brown and the cheese is melted.

    Serve

    Remove the quesadillas from the skillet and let cool for a minute. Cut into wedges and serve with sour cream, salsa, and optional fresh cilantro.
