    Prepare the Pork

    In a large skillet, heat olive oil over medium-high heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.

    Season the Pork

    Rub the pork shoulder with cumin, oregano, paprika, salt, and black pepper. Once the onions are ready, push them to the side of the skillet and place the seasoned pork shoulder in the center.

    Cook the Pork

    Sear the pork shoulder on all sides until browned, about 4-5 minutes per side. Pour the orange juice and lime juice over the pork, cover the skillet, and reduce the heat to low. Let it simmer for about 3 hours, turning occasionally, until the pork is tender and can be pulled apart easily.

    Shred the Pork

    Once the pork is cooked, remove it from the skillet and let it rest for 10 minutes. Use two forks to shred the pork into bite-sized pieces.

    Assemble the Quesadilla

    Heat a separate skillet over medium heat. Place a tortilla in the skillet, add a layer of shredded pork, a handful of cheese, and some chopped cilantro. Top with another tortilla.

    Cook for about 3-4 minutes on one side until the tortilla is golden brown, then carefully flip and cook for another 3-4 minutes on the other side until the cheese is melted.
