Method

Prepare Tortilla Chips

  1. 1

    Cut the Tortillas

Cut the corn tortillas into quarters or sixths, depending on your preferred chip size.

  2. 2

    Fry the Chips

Heat the vegetable oil in a large skillet over medium heat. Once the oil is hot, carefully add the tortilla pieces in batches. Fry until they are crispy and golden brown, about 2-3 minutes. Remove and drain on paper towels.

Make the Sauce

  1. 3

    Blend the Sauce Ingredients

In a blender, combine the tomatillos, jalapeño pepper, garlic, onion, cilantro, and salt. Blend until smooth.

  2. 4

    Cook the Sauce

Pour the blended sauce into a saucepan and simmer over medium heat for about 10 minutes, stirring occasionally, until it thickens slightly.

Prepare the Toppings

  1. 5

    Cook the Eggs

In a separate skillet, fry the eggs to your liking (sunny side up or over easy). Set aside.

  2. 6

    Prepare the Avocado and Onions

Slice the avocado and thinly slice the fresh onions.

Assemble the Chilaquiles

  1. 7

    Combine Chips and Sauce

In a large bowl or serving dish, add the tortilla chips and pour the warm sauce over them. Toss gently to coat the chips evenly.

  2. 8

    Add Toppings

Top the chilaquiles with the fried eggs, crumbled queso fresco, sliced avocado, fresh onions, and a dollop of sour cream.
