Traditional Mexican breakfast dish, fried corn tortillas chips simmered in green or red sauce. Topped with two eggs, queso fresco, sliced of fresh avocado, fresh onions & sour cream.

Prepare Tortilla Chips

Cut the Tortillas
Cut the corn tortillas into quarters or sixths, depending on your preferred chip size.

Fry the Chips
Heat the vegetable oil in a large skillet over medium heat. Once the oil is hot, carefully add the tortilla pieces in batches. Fry until they are crispy and golden brown, about 2-3 minutes. Remove and drain on paper towels.

Cook the Sauce
Pour the blended sauce into a saucepan and simmer over medium heat for about 10 minutes, stirring occasionally, until it thickens slightly.

Assemble the Chilaquiles

Combine Chips and Sauce
In a large bowl or serving dish, add the tortilla chips and pour the warm sauce over them. Toss gently to coat the chips evenly.

Top the chilaquiles with the fried eggs, crumbled queso fresco, sliced avocado, fresh onions, and a dollop of sour cream.
