Prepare the Pork
In a large bowl, rub the pork shoulder with olive oil, smoked paprika, cumin, chili powder, salt, and black pepper until well coated.

Sear the Pork
Heat a large skillet over medium-high heat. Sear the pork shoulder on all sides until browned, about 4-5 minutes per side.

Add Aromatics
Place the seared pork in a slow cooker. Add the chopped onion, minced garlic, apple cider vinegar, and water. Stir to combine.

Cook the Pork
Cover the slow cooker and cook on low for 8 hours or until the pork is tender and easily shredded with a fork.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it using two forks. Return the shredded pork to the slow cooker and mix with the juices.

Warm the Tortillas
Warm the large flour tortillas in a skillet or microwave until pliable.

Assemble the Burrito
Place a generous amount of pulled pork in the center of each tortilla. Top with cheddar cheese, sour cream, chopped cilantro, and a squeeze of lime juice.

Wrap the Burrito
Fold the sides of the tortilla over the filling, then roll it from the bottom up to enclose the filling completely.

Slice the burritos in half and serve immediately with extra lime wedges on the side.
