Method

Pulled Pork

    Prepare the Pork

    In a large bowl, combine the pork shoulder, orange juice, minced garlic, cumin, oregano, salt, black pepper, and diced onion. Mix well to coat the pork evenly with the marinade.

    Marinate

    Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 2 hours, preferably overnight for more flavor.

    Cook the Pork

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the marinated pork and sear on all sides until browned. Add bay leaves and enough water to cover the pork. Bring to a boil, then reduce heat to low, cover, and simmer for about 3-4 hours, or until the pork is tender and can be easily shredded with a fork.

    Shred the Pork

    Once cooked, remove the pork from the pot and let it cool slightly. Shred the meat using two forks and return it to the pot to soak up the juices. Adjust seasoning if needed.

Arepa Dough

    Make the Dough

    In a large bowl, combine the masarepa, water, and salt. Mix until a dough forms. Knead the dough for a few minutes until smooth.

    Shape the Arepas

    Divide the dough into 8 equal portions and shape each portion into a ball. Flatten each ball into a disc about 1/2 inch thick.

    Cook the Arepas

    Heat a non-stick skillet or griddle over medium heat. Add a little olive oil if desired. Cook each arepa for about 5-7 minutes on each side, or until golden brown and crispy on the outside.

    Slice the avocado and chop the cilantro. Cut the lime into wedges.
