Marinade

Beef

Method

Marinade Preparation

  1. 1

    Prepare the Chimichurri Marinade

In a mixing bowl, combine the chopped parsley, minced garlic, red wine vinegar, olive oil, red pepper flakes, salt, and black pepper. Whisk together until well combined.

Marinating the Beef

  1. 2

    Marinate the Beef

Place the beef flank steak in a large resealable plastic bag or a shallow dish. Pour the chimichurri marinade over the steak, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours or overnight for maximum flavor.

Cooking the Beef

  1. 3

    Cook the Beef

Preheat your grill or skillet over medium-high heat. Remove the beef from the marinade and shake off excess. Grill the steak for about 6-8 minutes per side for medium-rare, or until the desired doneness is reached. Remove from heat and let rest for 5 minutes before slicing.

Assembling the Burritos

  1. 4

    Assemble the Burritos

On each flour tortilla, layer a portion of cooked rice, black beans, sliced beef, shredded cheese, sour cream, and jalapeños if using. Roll up tightly, folding in the sides as you go, to create a burrito.

Serving

  1. 5

    Serve

Cut the burritos in half if desired and serve immediately with extra chimichurri on the side.
