Marinade Preparation

Prepare the Chimichurri Marinade
In a food processor, combine the fresh parsley, garlic cloves, red wine vinegar, olive oil, oregano, crushed red pepper, salt, and black pepper. Blend until the mixture is well combined and slightly chunky.

Marinate the Beef
Place the beef flank steak in a large zip-top bag or shallow dish. Pour the chimichurri marinade over the steak, ensuring it is well covered. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

Make the Arepa Dough
In a large bowl, combine the pre-cooked cornmeal and salt. Gradually add the warm water, mixing with your hands until a dough forms. Let the dough rest for about 5-10 minutes.

Form the Arepas
Divide the dough into 8 equal portions and shape each portion into a disc about ½ inch thick.

Cook the Arepas
In a large skillet over medium heat, add the oil. Once hot, place the arepas in the skillet and cook for 4-5 minutes on each side, until they are golden brown and slightly crispy.

Assemble the Carne Arepa
Slice the grilled beef into thin strips. Cut each cooked arepa in half and fill with the sliced beef. Optionally, you can add additional chimichurri sauce or toppings of your choice.
