Fried Eggs

    Prepare the Eggs

    In a skillet, melt the butter over medium heat. Crack the eggs into the skillet and season with salt and black pepper. Cook until the whites are set and the yolks are slightly runny or to your desired doneness, about 3-5 minutes. Remove from heat.

Yellow Rice

    Cook the Rice

    In a saucepan, combine the long grain rice, water, turmeric, and salt. Bring to a boil over high heat. Reduce heat to low, cover, and simmer for 15-20 minutes or until rice is tender and the water is absorbed. Remove from heat and let sit covered for 5 minutes, then fluff with a fork.

Papas Fritas

    Fry the Potatoes

    Peel and cut the potatoes into thin strips. Heat the oil in a deep skillet over medium-high heat. Once the oil is hot, carefully add the potato strips. Fry until golden brown and crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels. Season with salt.

    Assemble the Burritos

    Warm the flour tortillas in a dry skillet for about 30 seconds on each side. On each tortilla, layer a portion of yellow rice, fried eggs, sliced avocado, shredded Oaxaca cheese, and shredded lettuce. Roll up the tortillas tightly to enclose the filling.
