Brisket Preparation

Season the Brisket
In a large bowl, combine chili powder, cumin, garlic powder, onion powder, salt, and black pepper. Rub this spice mixture evenly over the brisket.

Cook the Brisket
Place the seasoned brisket in a slow cooker. Add water and bay leaves. Cover and cook on low for 8 hours or until the brisket is tender and easily shredded.

Shred the Brisket
Once cooked, remove the brisket from the slow cooker. Let it rest for 10 minutes, then shred it using two forks.

Prepare the Consomme
Strain the cooking liquid and reserve it as consomme. Adjust seasoning if needed.

Prepare the Tortillas
Warm the flour tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until pliable.

Assemble the Burrito
On each tortilla, layer shredded brisket, shredded cheese, chopped onion, and cilantro.

Roll the Burrito
Fold in the sides of the tortilla and roll it tightly from the bottom to the top to encase the filling.

Serve
Serve the burritos with a side of warm consomme for dipping. Optionally, garnish with lime wedges.
