Preparing the Arepas

Mix the Dough
In a large bowl, combine the arepa flour, salt, and water. Mix until a soft dough forms. Let it rest for 5 minutes.

Shape the Arepas
Divide the dough into 4 equal portions and shape each portion into a patty about 1/2 inch thick.

Cook the Arepas
Heat a non-stick skillet over medium heat. Cook the arepas for about 5-7 minutes on each side until golden brown and cooked through. You can also bake them for 15-20 minutes at 375°F (190°C) for a crispier texture.

Prepare the Filling
In a medium bowl, combine the black beans and corn. Add lime juice and olive oil, season with salt and pepper to taste, and mix well.

Prepare the Toppings
Prepare the pico de gallo if not using store-bought, and wash and shred the romaine lettuce.
Assembling the Arepas

Assemble the Dish
Slice each cooked arepa in half horizontally, creating a pocket. Fill each pocket with the black bean and corn mixture, then top with pico de gallo and shredded romaine lettuce.
