Method

Prepare Arepas

    Mix the Dough

    In a large mixing bowl, combine the pre-cooked white cornmeal and salt. Gradually add the warm water while mixing with your hands until a dough forms. The dough should be soft but not sticky.

    Shape the Arepas

    Divide the dough into four equal portions and shape each portion into a ball, then flatten each ball into a disc about 1/2 inch thick.

    Cook the Arepas

    Heat a skillet over medium heat and add the vegetable oil. Cook the arepas for about 5-6 minutes on each side, until they are golden brown and have a crispy exterior. You can also finish cooking them in a preheated oven at 350°F (175°C) for 10 minutes for a softer texture.

Prepare Fried Egg & Cheese

    Fry the Eggs

    In a non-stick skillet, melt the butter over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes. Season with salt and black pepper to taste.

    Add Cheese

    Once the eggs are cooked, sprinkle the cheese on top of the eggs and cover the skillet with a lid until the cheese melts, about 1-2 minutes.

Assemble Arepa Estrellada

    Serve

    Slice open each arepa and fill with the fried egg and melted cheese mixture. Serve immediately while hot.
