Adobo Marinade Preparation

    Prepare the Marinade

    In a mixing bowl, combine soy sauce, white vinegar, minced garlic, oregano, black pepper, and bay leaves. Whisk together until well blended.

    Marinate the Chicken

    Place the chicken breasts in a large zip-top bag or a shallow dish. Pour the adobo marinade over the chicken, ensuring it is fully coated. Seal the bag or cover the dish, and refrigerate for at least 2 hours, preferably overnight for best flavor.

Grilling the Chicken

    Preheat the Grill

    Preheat your grill to medium-high heat (about 375°F / 190°C).

    Grill the Chicken

    Remove the chicken from the marinade and discard the marinade. Place the chicken breasts on the grill and cook for about 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove the chicken from the grill and let it rest for 5 minutes.

    After resting, slice the grilled chicken breasts into thin strips.

Assembling the Quesadilla

    Lay one flour tortilla on a clean surface. On one half of the tortilla, layer a generous amount of shredded cheddar cheese, followed by sliced grilled chicken, and jalapeño slices if using.
