Cheesecake Preparation

    Prepare the crust

    Preheat your oven to 325°F (163°C). In a bowl, mix 1 1/2 cups of crushed graham crackers, 1/4 cup of granulated sugar, and 1/2 cup of melted butter. Press this mixture into the bottom of a 9-inch springform pan to form the crust.

    Mix the cheesecake filling

    In a large mixing bowl, beat the cream cheese until smooth. Gradually add in 1 cup of granulated sugar, mixing until well combined. Add 1 cup of sour cream and 1 tsp of vanilla extract, and mix until smooth. Add the eggs one at a time, mixing until just incorporated.

    Add seasonal fruit

    Gently fold in 1 cup of your chosen seasonal fruit into the cheesecake batter.

    Bake the cheesecake

    Pour the cheesecake batter into the prepared crust. Bake in the preheated oven for 50-60 minutes, or until the center is set and the edges are slightly puffed. Turn off the oven and leave the cheesecake inside for an hour to cool slowly.

    Chill and serve

    Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight before serving. Top with additional seasonal fruit if desired.
