Roasted Molokai Sweet Potatoes

    Preheat and Prepare

    Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Roast the Sweet Potatoes

    Peel and chop the Molokai sweet potatoes into bite-sized pieces. In a bowl, toss them with olive oil, sea salt, black pepper, and fresh thyme until evenly coated. Spread them on the prepared baking sheet in a single layer.

    Baking

    Roast in the preheated oven for 25-30 minutes, or until tender and slightly caramelized, turning halfway through.

    Cooling

    Remove from the oven and allow the sweet potatoes to cool to room temperature.

    Final Touch

    Once cooled, drizzle with lemon juice and sprinkle with chili flakes to taste. Serve chilled or at room temperature.
