    In a large mixing bowl, combine the ground beef, salt, and black pepper. Mix until well combined, being careful not to over-mix.

    Form Patties

    Divide the beef mixture into 8 equal portions and shape each portion into a small patty, about 1/2 inch thick.

    Cook the Patties

    Heat a grill or skillet over medium-high heat. Cook the patties for about 3-4 minutes on each side or until they reach your desired level of doneness.

    Add Cheese

    Place a slice of cheddar cheese on each patty during the last minute of cooking. Cover the grill or skillet to help the cheese melt.

    Assemble the Burgers

    Place each cooked patty on a mini burger bun. Top with ketchup, mustard, and pickles to taste.

    Wash and peel the potatoes. Cut them into thin strips, resembling fries.
