Mousse Preparation

    Melt Chocolate and Butter

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a saucepan of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let cool slightly.

    Separate Eggs

    While the chocolate mixture cools, separate the egg yolks from the egg whites. Place the egg whites in a clean mixing bowl and the yolks in another bowl.

    Mix Egg Yolks and Sugar

    Add the granulated sugar and vanilla extract to the egg yolks. Whisk until the mixture is pale and creamy.

    Combine Chocolate and Egg Yolks

    Gradually add the melted chocolate mixture to the egg yolk mixture, stirring until well combined.

    Whip Egg Whites

    Using a hand mixer or stand mixer, whip the egg whites with a pinch of salt until stiff peaks form.

    Fold in Egg Whites

    Gently fold the whipped egg whites into the chocolate mixture in three additions, being careful not to deflate the egg whites.

    Chill the Mousse

    Spoon the mousse into individual serving dishes or a large bowl. Cover and refrigerate for at least 2 hours, or until set.

    Whip Cream

    In a mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract. Using a hand mixer, whip the cream until soft peaks form.

    Top the Mousse

    Once the mousse has set, remove it from the refrigerator. Spoon or pipe the whipped cream over the chocolate mousse before serving.
