Cake Preparation

Preheat the oven
Preheat your oven to 425°F (220°C). This ensures your chocolate lava cakes bake properly.

Prepare the ramekins
Grease four ramekins with butter and dust with flour to prevent sticking. Place them on a baking tray.

Melt chocolate and butter
In a heatproof bowl, combine the bittersweet chocolate and unsalted butter. Melt them together over a double boiler or in the microwave in 30-second intervals until smooth. Let it cool slightly.

Mix the sugar and eggs
In a separate bowl, whisk together the granulated sugar, large eggs, and egg yolks until pale and fluffy.

Combine mixtures
Slowly pour the melted chocolate mixture into the egg mixture, stirring continuously until well combined.

Add flour and salt
Sift in the all-purpose flour and add a pinch of salt. Fold gently until no flour streaks remain.

Fill the ramekins
Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.

Bake the cakes
Bake in the preheated oven for 12-14 minutes, until the edges are firm but the center is soft.

Cool and unmold
Remove from the oven and let them cool for 1 minute. Carefully run a knife around the edges, then invert onto serving plates.

Top each chocolate lava cake with a scoop of vanilla ice cream, and dust with powdered sugar. Optionally, add fresh berries for garnish.
